I recently started the journey of Pescetarianism (vegan but eating seafood only), in addition to being dairy free because of my allergies.
I know, I basically eat nothing now…lol However, I am very proud of my decision.
(Although some days I secretly dream of my days of chicken wings and juicy t-bone steaks)🙄 😂😂
There are not a lot of restaurants that offer dairy free and vegan options so I cook often. I thought it would be great to share a few of those recipes with you!
Lobster Potato Salad
Ingredients:
5 pounds of golden potatoes
2 packs of imitation lobster tails or 2 boiled lobster tails
2 packs of imitation crab meat or 1 16 oz container of cooked crab meat
1 onion
1 bell pepper
2 bunches of green onion
2 tablespoons of minced garlic
1 cup of almond/coconut milk
dairy-free butter (like country crock)
dairy-free cheddar cheese (like daiya)
dairy-free sour cream (like Tofutti)

Peel all 5 lbs of potatoes! (You can definitely do this with instant potatoes… but I think it taste better when I peel the potatoes myself.) 😉 Boil the potatoes on high for 20 minutes.

Chop up the onion, bell pepper, and green onions. Using a skillet, add 2 tablespoons of butter and saute the vegetables at medium heat. Add the two tablespoons of minced garlic and allow to cook for 15 minutes.

Add the lobster and crab meat to the sauteed vegetables. Season the sauteed items with this stuff below:
Now you can use your own seasonings to your preference but I’m from Louisiana so these are some basic creole seasonings most of my seafood dishes include. ❤️

I used a cap full of crab boil (the holy grail of allllllll of my recipes) 🙏🏽
Once you have seasoned your meat to your taste, turn off the skillet. Then turn your focus to the potatoes.
Drain the potatoes and return to the pot. Add a cup of almond/coconut milk and 3 tablespoons of butter. Place the pot on a low heat and allow the butter to melt stirring the potatoes every few minutes. Once the butter has melted, add half of the container of sour cream (approximately 4 tablespoons) and the full bag of cheddar cheese. Stir the potatoes until they resemble mashed potatoes. At that point add the meat mixture to the potatoes like so…

Stir the meat mixture into the potatoes until well blended. Then serve!

This is great alone or with a vegetable like🥦broccoli or asparagus.
